Once considered to be an inferior meat product, today the Polish head cheese is regarded as a unique gourmet delicacy. Depending on the seasonings, shape, and main ingredients, which often include brawn, offal, or blood, traditional Polish cuisine boasts with more than ten different head cheese varieties. They are mostly prepared with pork, but some varieties exclusively use veal. Once popular in many cities bordering Germany, today they are prepared and enjoyed throughout the country. Regardless of the type, these texturally-exciting treats are usually enjoyed as cold cuts, commonly accompanied by bread and various meat products.

Čvarci or ocvirki is a traditional specialty that's popular in Southeastern Europe and the Balkans. This variety of pork rinds or cracklings is usually homemade, and it's made by thermally extracting fat from the lard. The lard is usually cut into blocks and fried in its own fat until it melts away and tough and crispy pork rind remain in the pot. During the process, čvarci are constantly stirred with big spoons, and milk is often added in order for them to obtain the color of caramel. Salt is typically added to the mixture, while some cooks like to add garlic or onions to the mixture. Čvarci are typically made in late autumn or winter, often during the pig slaughter, and they're usually enjoyed as a snack, served with bread and raw onions and paired with beer or rakija on the side. Small pieces of čvarci are often used in savory snacks such as pogačica s čvarcima.

Boczek

Boczek is a general name for numerous varieties of Polish bacon that is made with belly and rib meat, usually pork. After it has been cured, the meat is usually smoked, double-smoked, smoked and cooked, hunter-style, or with ribs on, known as boczek z kością. Polish boczek often enhances the flavor of slow-cooked dishes such as soups, casseroles, bigos, or golabki. This traditional cured meat product is also commonly eaten with scrambled eggs or with a slice of rye bread smeared with mustard.
