Katsuo Rice Cracker, known in Japanese as Katsuo Senbei, is a savory snack from Yagichō Honten in Nihonbashi, Tokyo. One of the company’s signature products, it brings the aroma of katsuobushi, a traditional ingredient used to prepare dashi, into cracker form.

It is made from squid, starch, octopus, and katsuobushi from Yaizu, with vegetable oil, soy sauce, mirin, sugar, salt, and other seasonings.
