Yamamo is a family-run artisanal company founded in 1867 in Yuzawa City, Akita Prefecture, and has been producing miso paste and soy sauce for seven generations. What sets Yamamo apart is its unique blend of tradition and innovation: while remaining faithful to time-honored fermentation techniques in wooden barrels and using local ingredients (soybeans, rice, wheat, and natural water from Akita), they also experiment with new fermented products and conceptual design.
