Sawrab Honey is a rare Yemeni white honey produced by Yemen Eye, also known as Al-Sawrab Honey. It originates in the mountains of Ibb Governorate and is made from the nectar of the small flowers of the wild sawrab plant (Hypoestes forskaolii), whose brief flowering season limits the amount of honey available.
Once harvested, the honey is carefully extracted, filtered, and laboratory tested, with minimal processing to preserve its natural qualities. Immediately after extraction, it may appear translucent and pale yellow, but it soon begins to crystallize and gradually develops its characteristic color.
When fully crystallized, Sawrab Honey is almost white, firm, and finely creamy, with a smooth, delicate crystal structure. Its sweetness is gentle and clean, accompanied by subtle floral and mountain-herb notes. It can be enjoyed directly from the spoon or served with fresh bread, mild cheeses, yogurt, and traditional Yemeni pastries.
