Turunç Kabuğu Reçeli is a Turkish bitter orange peel jam produced by Yenigün Gıda in Antalya. Bitter orange peel accounts for 65 percent of the product, resulting in clearly visible pieces of peel. The remaining ingredients include sugar, water and lemon juice which regulates acidity. Bitter orange differs from sweet orange through its more intense aroma and the natural bitterness of its peel. Processing reduces some of this bitterness while preserving the mildly bitter finish characteristic of this citrus fruit. The jam has a thick syrup and firm pieces of peel that provide a noticeable contrast in texture. Its flavor combines citrus freshness, the sweetness of sugar and subtle bitterness. The product contains no glucose syrup, artificial colors or preservatives. It can also be used in cakes, pancakes and yogurt-based desserts.
