Kaze no Mori ALPHA 1 is a sake produced by Yuchō Shuzō as part of its experimental ALPHA series. Its subtitle, “Gateway to the Next Chapter”, reflects the brewery’s aim to open new possibilities for enjoying sake through an approachable release with a lower alcohol content.

It is made from locally grown Akitsuho rice, polished to 70% of its original grain weight, rice kōji, and water, without added distilled alcohol.

It features pronounced fruity notes, rich flavor, and fullness despite its lower alcohol content. Immediately after opening, it may show a gentle natural effervescence from carbon dioxide produced during fermentation. As this subsides, the rice sweetness, umami, and fruity acidity become more apparent.
