Akashi-Tai Junmai Daiginjo Genshu is a sake produced by Akashi Sake Brewery in Akashi, Hyōgo Prefecture, Japan.
It is made from Yamadanishiki rice grown in Hyōgo Prefecture and polished until 38% of each grain remains. Like other Akashi-Tai sake, it is handcrafted in small batches.
It has floral and fruity aromas with notes of melon, citrus and herbs. The palate is expressive yet delicate, with mineral notes and a long finish. The brewery recommends serving it chilled at 7–15 °C, alongside dishes such as tuna tartare, sea fish or shellfish.
