Proceeds the Gentian - Tarocco from Antidoot - Wilde Fermenten is an experimental wild ale aged for over a year in wooden barrels, crafted in a style inspired by Italian amaro liqueurs. The base beer, fermented with wild yeasts, was infused during cooling in an open vessel with gentian root and bitter orange, giving it a complex herbal and citrus profile.
After maturation, it was macerated with Sicilian Tarocco blood oranges, adding intense fruity aromas and a refreshing tartness. The aroma is dominated by notes of blood orange, the herbal character of gentian, and subtle woody undertones, while the flavor blends bitterness, fruity juiciness, and gentle acidity into a well-balanced whole.
The texture is light to medium-bodied, with a dry finish that leaves a refreshing and lingering citrus-herbal impression.
