Colleruita Colli Assisi Spoleto is an extra virgin olive oil produced by Azienda Agraria Viola, near Foligno in Italy’s Umbria region. It is made from olives grown on the hills of Roviglieto and Scandolaro.

It combines Moraiolo, Frantoio, and Leccino olives, harvested during October and November by hand and with harvesting aids. Following careful selection, the olives are processed in a modern continuous-cycle mill, and the resulting oil is filtered.

Colleruita has a pronounced vegetal character: its aroma recalls artichoke leaf and chicory, with fresh notes of mint, sage, and wild fennel. On the palate, notes of cardoon, artichoke heart, and lettuce unfold, leading to a sweet almond finish.

Pronounced bitterness and pungency give it structure and a lingering flavor. It pairs well with lentil soup, grilled beef, lamb ribs, and porcini mushrooms, and can also be drizzled over tuna or swordfish carpaccio.
