Ritual Lab

4.4 ·
Ritual Lab is an Italian craft brewery based in Formello, near Rome, established in the mid-2010s and widely recognized as one of the most innovative and awarded breweries in the country. Its approach is rooted in a combination of technical precision, continuous experimentation, and a research-driven mindset, positioning it firmly within the modern craft beer movement. The brewery focuses on producing unfiltered and unpasteurized beers without additives, placing strong emphasis on raw material quality and product freshness. Its portfolio spans a broad range of styles, from contemporary IPAs and hazy variations to pilsners, sour beers, and more complex, high-ABV styles such as imperial stouts and barleywines. A key element of its identity is the “Barrel Aged Project,” a line of beers matured in various types of wooden barrels, including bourbon and cognac, which develop layered notes of wood, oxidation, and alcohol integration. Beyond production, Ritual Lab also operates as an educational hub, offering structured brewing courses that cover the entire process from raw ingredients to packaging. The brewery’s philosophy balances respect for traditional techniques with openness to innovation, resulting in beers with strong identity and technical consistency. It has also developed its own distribution approach to better preserve quality during transport across Italy. Through consistent output and stylistic exploration, Ritual Lab has earned multiple “brewery of the year” recognitions and a solid reputation within the European craft beer scene.

Abbazia di Tre Fontane

4.4 ·
Abbazia delle Tre Fontane in Rome operates the only Trappist brewery in Italy, run by monks of the Cistercian Order of the Strict Observance. Brewing began in 2015 as part of the monastic tradition of manual work and self-sufficiency, in accordance with the strict rules governing Trappist products: the beer must be brewed within the monastery, under the supervision of the monks, and profits must support the monastic community and charitable activities. Their flagship beer, Tripel, is a strong golden ale (around 8.5% ABV) inspired by the Belgian Tripel style. A distinctive feature is the addition of eucalyptus leaves grown within the abbey grounds, which lend subtle herbal freshness alongside classic notes of ripe fruit, honey, and gentle spice. The body is full and rounded, with a dry, clean finish. The brewery holds the official “Authentic Trappist Product” label, confirming compliance with recognized Trappist production standards. Distribution remains selective and relatively limited, reinforcing its artisanal scale and monastic identity within the broader European Trappist brewing tradition.

About this ranking

TasteAtlas food rankings are based on the ratings of the TasteAtlas audience, with a series of mechanisms that recognize real users and that ignore bot, nationalist or local patriotic ratings, and give additional value to the ratings of users that the system recognizes as knowledgeable. For the “Top 7 Lazian Beers” list until June 15, 2026, 0 ratings were recorded, of which 0 were recognized by the system as legitimate. TasteAtlas Rankings should not be seen as the final global conclusion about food. Their purpose is to promote excellent local foods, instill pride in traditional dishes, and arouse curiosity about dishes you haven’t tried.

The initial list of top producers was compiled based on available reviews, awards, local recommendations, media and blog coverage, and consumer reviews. The list will be updated with ratings from TasteAtlas local ambassadors and TasteAtlas users.
