Central Texas-style barbecue originated in the Czech and German meat markets in the late 19th century. This barbecue style is typically associated with cooking brisket (the fattier portion is called point, while the leaner portion is called flat) low and slow, usually over post oak fire. It is then cooked in offset smokers, while the heat and smoke from the fire go across the meat, adding an irresistible smoky flavor to the brisket (although shoulder clod, chuck short ribs, and larger short ribs are also popular). The meat is carved in front of the customer, and it is traditionally served on butcher paper (as an homage to the meat markets of yore), most often without any type of barbecue sauce on the side.

Cochinita pibil is a Mexican pork dish originating from Yucatan. Pork is marinated in a combination of annatto paste, bitter orange juice, and garlic. It is slowly baked and then shredded and served on tortillas, tacos, or on its own with shallots, pickled onions, salsa, and various roasted vegetables. Cochinita pibil is characterized by the red color of the meat, imparted by the annatto seeds from the marinade. Originally, pork was wrapped in banana leaves prior to baking, but today a foil or any other suitable wrapping can be used instead. Since cochinita means baby pig, and pibil means buried or underground, it acts as a proof that the original recipe used a whole suckling pig that was buried in a pit for roasting. This Mayan-influenced dish is most often served on weekends in many Mexican homes, usually as a Sunday family ritual.

Antojitos (lit. little cravings) refers to a variety of Mexican foods that are prepared in market stalls and on the streets. Due to the fact that formal, substantial meals are consumed in the mid-afternoon, most antojitos are eaten either in the morning or the evening. Typical antojitos include fajitas, tortas, tamales, tacos, tostadas, tlayudas, elote, chalupas, gorditas, empalmes, quesadillas, cemitas, empanadas, pambazo, chilaquiles, and nachos. However, vegetables, fruits, and soups such as pozole and menuda are also classified as antojitos. And let's not forget about the popular Mexican beverages known as aguas frescas, which are traditionally found on the streets. The famous American author and chef Rick Bayless grouped antojitos according to the one element present in all antojitos – corn masa, and in the end, he was left with 8 types of antojitos: tamales, tostadas, tacos, sopes, gorditas, quesadillas, enchiladas, and chilaquiles. Regardless of the classifications, antojitos are one of the staples of Mexican food, and can be consumed as an appetizer, a snack, or as a full meal when eating more than a couple of these delicious "little cravings."

One of New England cuisine staples, the Maine-style lobster roll consists of a chilled lobster salad tucked into New England-style split-top buns. The lobster salad, at its basic, is made with knuckle and claw meat that is dressed in mayonnaise and mixed with finely chopped celery, seasoned only with salt and pepper. Variations typically include ingredients like lemon juice, mustard, and chives. Because the buns are buttered and toasted, the result is a lobster roll with contrasting texture and flavor: a warm, buttery, toasted bun vs. a cold, crunchy lobster salad. It is unknown when it was invented and by whom. What is known is that it started to first appear sometime in the 1950s due to the explosion of summer tourism, but it boomed in the 1970s thanks to the increase in the roadside lobster roll stands. Red Eat's, the most famous restaurant on Route 1 in Maine, had a big role in popularizing it. Also, even though the Connecticut-style lobster roll appeared earlier, the Maine-style one is the more popular of the two. When it comes to serving, the most typical pairing is a Maine lobster roll and either creamy clam chowder or seafood chowder. But at seafood shacks or food stands, it is typically served with salt and vinegar potato chips, coleslaw, pickles, and onion rings.
