Beyaz Fırın’s Acıbadem Kurabiyesi is a traditional Turkish biscuit and one of the products most closely associated with the history of this Istanbul bakery. Beyaz Fırın began producing it during the shortages of the 1940s, when the Stoyanof family was searching for a product that could be made from available ingredients and sold individually. Unlike conventional versions, which are usually based on ground almonds, Beyaz Fırın’s recipe primarily combines ground hazelnuts, egg whites and sugar with a small quantity of bitter almond for its characteristic aroma. The biscuit is typically large and round, with a lightly crisp, naturally cracked surface and a soft, moist and slightly chewy centre. Its flavour is dominated by roasted hazelnuts, balanced sweetness and a subtle bitter-almond note. Sold individually and in branded packaging, Acıbadem Kurabiyesi remains one of Beyaz Fırın’s most distinctive products and holds a special place in the company’s heritage.
