Phở Hữu Cơ are organic rice noodles produced by the Vietnamese company Bích Chi. They are made in Sa Đéc, a city known for its long tradition of rice processing and noodle production. Their only declared ingredient is 100 percent organic rice. The noodles have the wide and flat shape traditionally associated with Vietnamese phở. Their naturally mild rice flavor allows them to absorb the aromas of broth, spices, and other ingredients. Before cooking, the noodles should be rinsed with clean water. They are then placed in boiling water and cooked for approximately six to eight minutes. Once cooked, they should be rinsed again to remove excess surface starch and prevent sticking. A small amount of oil can be added after draining if the noodles are intended for stir-frying. Their soft and flexible texture pairs well with meat, eggs, and vegetables. In addition to phở soup, they can be used in stir-fried dishes and various hot or cold noodle preparations.
