Fino Viña Corrales from Bodegas San Francisco Javier is a contemporary expression of classic fino sherry, created with the clear ambition of being presented as a serious white wine with a strong sense of terroir. It is made from the Palomino Fino grape grown in the Viña Corrales vineyard, located in the prestigious pago Balbaína, known for its albariza soils and the strong influence of the Atlantic climate.

The wine matures under a layer of flor yeast in the traditional solera system, which gives it its characteristic purity and stylistic precision, as well as a pronounced minerality that sets it apart from more typical finos. In the glass, it is bone-dry, pale golden in color, with aromas of fresh dough, almonds and subtle maritime notes that clearly reflect its origin.

On the palate, it is linear and taut, with vibrant freshness and a delicate saline touch that extends the finish. The texture is light yet far from simple, as layers of flavor gradually unfold through nuances of citrus, herbal tones and the gentle bitterness typical of the fino style.

This wine goes beyond the role of a classic aperitif, standing confidently as a serious gastronomic partner for seafood, fish and lighter Mediterranean dishes.
