Indigo Gem is a spontaneously fermented fruit beer from Brett & Sauvage. It is crafted as a blend of spontaneous fermentations from multiple vintages, followed by several weeks of maceration with locally harvested honeyberries (camerise) from the Gaspésie region.

The beer is aged in wooden barrels, and secondary fermentation takes place in the bottle through natural carbonation using local honey. With an ABV of around 4.6%, it features a deep reddish hue and a hazy texture typical of rustic ales.

The aroma is dominated by notes of ripe red fruit, subtle citrus hints, and a mild funky character from Brett yeast. The flavor is complex and well-balanced - fruity tartness, earthy undertones, and gentle minerality give the beer a distinctive depth.

Indigo Gem is best served chilled at 6-8°C in a tulip glass, and thanks to its structure and natural fermentation, it also has excellent aging potential.
