Ledon Ledum is a hybrid spontaneously fermented beer from Brett & Sauvage, created by blending spontaneous fermentations from 2020 and 2021, enhanced with Saccharomyces bayanus yeast isolated from local honey. With a moderate alcohol content of around 5.2% ABV, it is bottled in 750 mL format and naturally carbonated with clover honey from Gaspésie.
The aroma reveals delicate citrus notes, while the flavor offers a balanced interplay of funky character, honey sweetness, pine nuances, and earthy undertones - resulting in a complex yet highly drinkable beer. It is best served in a tulip glass at 4-10°C to fully express its aromatic depth.
Thanks to its gentle acidity and mineral profile, it pairs well with food and drinks much like an orange wine in beer form.
