Formaggio Misto Classico Stagionato is a traditional cheese made from a blend of pasteurized sheep’s and cow’s milk, originating from the Cagliari region in Sardinia. Produced by Caseificio Ferruccio Podda, it is aged for a minimum of five months, with some wheels maturing for up to a year.
The cheese features a firm, golden-brown rind and a pale, slightly pink interior marked by small, irregular holes. Its texture is crumbly and grainy, suitable for slicing or grating.
The flavor is rich and well-balanced - combining the salty, nutty character of sheep’s milk with the mild sweetness of cow’s milk, accompanied by light grassy and lanolin notes. Often used as an alternative to Parmesan, it offers a more pronounced character.
It pairs beautifully with rustic bread, walnuts, honey, or Sardinian red wine.
