Café Apu Gourmet is a specialty coffee produced by the Peruvian cooperative Cenfrocafe, an organization that brings together small coffee producers from the Cajamarca region, particularly from the areas of Jaén and San Ignacio. The coffee originates from specific microclimatic zones in the Andes, where altitude, temperature, and humidity create favorable conditions for cultivating high-quality Arabica coffee.
The product carries organic and Fair Trade certifications, confirming that it is grown without synthetic chemicals and within a system that promotes fairer conditions for producers. Traditional Arabica varieties such as Caturra, Typica, and Bourbon are used in its production, all of which are typical for the mountainous coffee-growing regions of Peru.
The processing method includes careful selection and washing of ripe cherries, fermentation at temperatures below 15 °C, and slow drying in the shade that can last more than 25 days. This approach helps preserve the complex aromatic characteristics of the beans.
After drying, the coffee is stored in high-density protective bags that help maintain bean quality during storage and transport. In the cup, the coffee is generally described as balanced, with clean aromas and refined notes that result from controlled fermentation and slow drying.
