Bún Khô Đà Vị are dried Vietnamese rice noodles produced by the Đà Vị Agricultural Cooperative in Tuyên Quang Province. They are a traditional product of the Tày people from the mountainous district of Na Hang. The noodles are made from pure Bao Thai rice grown on local terraced fields. The rice is first cleaned and soaked in water before being wet-milled. The resulting mixture is kneaded and extruded through a machine to form long and uniform strands. The noodles are then dried to reduce their moisture content and extend their shelf life. Production combines the traditional knowledge of local families with modern equipment for shaping and processing the noodles. The product contains no added colors or preservatives. Its strands are slightly thicker than those of many standard dried rice noodles. After preparation, they become soft and elastic while retaining enough firmness to avoid breaking apart when reheated. The noodles have a natural rice aroma and a mild, subtly sweet flavor. Once prepared, they can be used like fresh bún noodles in soups, dishes with meat or fish, and combinations with vegetables and aromatic herbs.
