Bánh Tráng Gạo Đại Cường is a Vietnamese rice paper produced in Đông Lâm village in the Da Nang area. Its main ingredient is locally grown rice selected for its distinct aroma, softness, and natural stickiness. The grains are soaked overnight to soften them and allow for even grinding. The resulting rice flour is mixed with a suitable amount of water to create a smooth batter of medium consistency. The correct consistency is important because a batter that is too thin produces fragile sheets while one that is too thick is difficult to spread evenly. The batter is spread into a thin layer and briefly steamed until it forms a cohesive and flexible sheet. The freshly prepared sheets are carefully transferred onto bamboo racks and dried in the sun. Drying reduces their moisture content and allows the rice paper to be stored and transported without refrigeration. The finished product has a mild flavor, a recognizable rice aroma, and a texture that becomes soft and suitable for wrapping after moistening. Đại Cường produces larger bánh lề sheets, square rice paper, and smaller wrappers intended for preparing fried ram rolls. Depending on the selected form, the sheets can be used for rolls filled with meat, vegetables, and aromatic herbs or for filled rolls that are subsequently fried.
