Souri is an indigenous olive variety from the Middle East, prominently featured in Eretz Gshur’s line of olive oils. The oil has a greenish color with rich golden hues, indicating olives harvested at a semi-green stage of ripeness.
Its aroma is fruity and pronounced - notes of green fruit, fresh grass, newly-cut herbs, and subtle spicy undertones. The taste is robust, with noticeable bitterness and pungency that develop and linger in the aftertaste.
The finish is sharp, with a spicy kick felt in the throat. Souri oil pairs excellently with dishes that have intense flavors - grilled fish, white meat, salads with nuts, stronger cheeses, and spiced vegetable dishes.
It also works well as a finishing oil - a few drops over a completed dish enhance flavors without overwhelming them.
