Süzme Çam Balı is a strained pine honey originating from the pine forests surrounding Fethiye in Muğla Province. Unlike flower honey, pine honey is not primarily produced from floral nectar but from honeydew found on pine trees. A scale insect that lives on pine trees feeds on their sap and secretes a sweet substance. Bees collect this substance, carry it back to the hive, and process it until the honey matures. Pine honey in the Fethiye area is generally harvested between August and November. During the first harvest, the honeydew may be combined with nectar from summer flowers. The second harvest produces honey with the highest proportion of pine-derived components. The third harvest may contain a combination of pine honeydew and nectar from winter flowers. Pine honey is generally characterized by its dark color, dense consistency, and pronounced woody and resinous aroma. Its flavor is less floral than that of conventional nectar honey and may contain mild spicy notes. It can be served with bread, yogurt, and cheese or used as a sweetener for various cold foods and beverages.
