Fromagerie Loiseau is a renowned fourth-generation family-run affineur based in Achères-la-Forêt, traditionally specializing in the aging of Brie de Meaux. This cheese is made from raw cow’s milk, featuring a fine white rind and a soft yellowish paste - delicately creamy but never runny.

Its affinage lasts between 4 and 8 weeks, and Loiseau has perfected the art of aging, ensuring the cheese is never too dry or overly soft. The local team carefully monitors the texture and aroma of each Brie daily - turning the wheels by hand and evaluating them by touch and scent.

Loiseau was a pioneer in reviving Brie de Melun in the 1970s and is now one of only five authorized AOP affineurs in the region. Their Brie de Meaux is a traditional, hand-crafted cheese that matures slowly, offering elegance, a mild creamy flavor, and historical importance.

It pairs perfectly with a white Bourgogne, a glass of sparkling wine, or fresh crusty bread.
