Nabeshima Daiginjo is a Japanese sake produced by Fukuchiyo Shuzō in Kashima. It belongs to the daiginjo category and is one of the sakes that has brought the Nabeshima brand international recognition.
It is made from Yamada Nishiki rice, rice kōji, and water, with the addition of distilled alcohol characteristic of this style. The rice is polished until 35% of each grain remains, and the sake has an alcohol content of 17% ABV. The addition of alcohol distinguishes it from junmai daiginjo.
It has a rich, fruity aroma with fresh notes and a long finish. Serve it lightly chilled, at around 10–15 °C, to bring out its aromatic character. It pairs well with seafood, particularly shellfish and crustaceans.
Producer
Fukuchiyo Shuzō is a Japanese sake brewery founded in 1923 in Kashima, Saga Prefecture. It is best known for Nabeshima, a brand launched in 1998 by third-generation brewer Naoki Iimori with the aim of creating a sake the local community could take pride in.
The brewery uses carefully selected rice and water, prepares its kōji by hand, and closely monitors fermentation. Rather than focusing solely on a pronounced aroma or sharpness, it aims for the balanced character it describes as “natural”. The Nabeshima range includes junmai, junmai ginjō, and junmai daiginjō sake, as well as seasonal releases.
Nabeshima is sold in Japan and through distributors abroad. In Kashima, Fukuchiyo Shuzō also introduces visitors to sake, local culture, and cuisine through its gallery and hospitality venue.
