Oude Geuze De Cam is a traditional Belgian gueuze produced by Geuzestekerij De Cam in Gooik in the Pajottenland region. It is created by blending one, two, and three-year-old lambics originating from several regional breweries. De Cam allows the acquired wort to ferment spontaneously and mature in large oak barrels, many of which are more than a century old. Karel Goddeau monitors the development of the individual lambics before selecting and blending barrels of different ages and characteristics. The younger lambic provides the residual fermentable sugars required for natural secondary fermentation in the bottle. The older lambics contribute greater acidity, dryness, and more complex aromas developed during prolonged maturation. The beer is produced without sweetening, filtration, or pasteurization in accordance with the traditional oude gueuze method. It has a golden to dark amber color and lively natural carbonation. Its aroma and flavor may contain notes of green apple, lemon peel, dried fruit, wood, earth, and the characteristic qualities of spontaneous fermentation. The finish is dry, tart, and persistent with a pronounced influence of aged oak. Its alcohol content can vary between batches and generally ranges from approximately 5.5 to 6.5 percent.
