Çifte Kavrulmuş Karışık Çerezli Lokum is a mixed selection of double-cooked Turkish delight with nuts produced by Hacı Şerif in Denizli. The basic mixture is prepared from sugar, water and corn starch, with citric acid added as an acidity regulator. According to the producer, the Turkish delight is cooked in small kettles. The term çifte kavrulmuş refers to extended cooking, during which the mixture loses more water than conventional Turkish delight. This process produces a firmer, denser and more elastic texture. The assortment generally includes varieties with pistachios, hazelnuts and almonds, along with combinations featuring coconut, pomegranate or orange. The proportion of nuts varies by variety and may amount to 12 percent for pistachios or 15 percent for hazelnuts, almonds and peanuts. Certain varieties also contain cocoa, pomegranate juice or soapwort extract. Pomegranate and orange flavourings, red radish extract and curcumin are used to create different flavours and colours. Depending on the variety, the pieces may be coated with ground pistachios, coconut or powdered sugar. The product combines the pronounced sweetness of Turkish delight with the crisp texture and aroma of nuts.
