Jikon Junmai Ginjo Mie Yamadanishiki is a sake made by Kiyashō Shuzō in Nabari, Mie Prefecture. The name Jikon reflects the idea of giving one’s full attention to the present moment, while Mie Yamadanishiki highlights the rice’s local origin.
It is made entirely from Yamada Nishiki rice grown in the Iga region, polished until 50% of each grain remains. It has an alcohol content of 15.5%. This sake brings local rice together with the qualities associated with Jikon: pronounced rice flavor, freshness, and carefully balanced acidity.
Smooth and juicy on the palate, it has a gentle mineral note and a subtle touch of effervescence. Its aroma and richness develop before giving way to a clean, light finish. Serve it chilled with sashimi, grilled fish, or dishes that allow its finer nuances to come through.
