Kulmbacher Eisbock by Kulmbacher Brauerei is a strong dark lager produced in the traditional German eisbock style. It begins as a full-bodied bock beer that is partially frozen after fermentation and maturation. During this process, part of the water turns into ice and is separated from the remaining liquid. This increases the concentration of alcohol, sugars, and aromatic compounds without the addition of distilled alcohol. The finished beer contains 9.2 percent alcohol by volume and has a full, rounded body. Its color ranges from deep copper to dark brown with possible ruby highlights. Malt, caramel, toasted bread, and dark dried fruit dominate its aromatic profile. The flavor may include notes of dried plums, raisins, and lightly caramelized malt. Its sweetness is more pronounced than that of a standard bock, while the hop character is generally limited to moderate bitterness that maintains balance. The higher alcohol content contributes warmth and further emphasizes its concentrated malt aromas. Kulmbacher Eisbock is regarded as one of the oldest commercially produced and best-known examples of this uncommon German beer style.
