La Sirène Saison is a rustic farmhouse ale produced by the Australian brewery La Sirène Brewing. It was originally brewed in 2009 and officially released in 2010 as the brewery’s first commercial beer. Its recipe was inspired by traditional saisons and wild-fermented ales from southern Belgium. It remains the producer’s flagship and most recognizable beer. The beer is made with minimal intervention and the brewery’s proprietary house culture. Primary fermentation takes place in open French oak puncheons, allowing contact with wild yeast and bacteria present inside the brewery. It is then transferred to smaller French oak barrels where it matures without temperature control. Individual barrels develop distinct characteristics and are blended after maturation to create the final composition. The beer subsequently undergoes secondary fermentation in the bottle for up to three months, producing natural carbonation. It has a cloudy golden-straw color and a voluminous head. Its aromatic profile includes apricot, guava, citrus, oregano and white pepper, while maturation can produce more pronounced yeasty, earthy and herbal notes. The finish is dry with mild acidity developed during fermentation and barrel maturation. La Sirène Saison contains 6.5 percent alcohol by volume and represents an Australian interpretation of the traditional Belgian saison.
