Paragon is a barley wine from Lervig’s limited “Rackhouse” series, a line dedicated to aging beer in wooden barrels. Each release is produced once a year and differs depending on the type of barrels used for maturation, which gives every vintage its own character and aromatic profile.

The core style is a strong, dense, and complex barley wine with a high alcohol content (typically around 13%), a rich texture, and slow development in the glass. Paragon matures in whiskey or bourbon barrels, with aging periods ranging from 12 to 18 months, during which the beer absorbs notes of vanilla, caramel, oak, and dried fruit.

The aroma combines toffee, dates, figs, and subtle chocolate tones, with noticeable bourbon warmth on the finish. On the palate, caramel sweetness and oak nuances dominate, supported by a gentle alcoholic heat that lingers.

Carbonation is low, highlighting the full body and oily mouthfeel. Paragon is designed to be savored slowly and resembles a dessert wine or digestif more than a classic beer.

The brewery emphasizes that the beer can be cellared for years, as aging further develops its complexity.
