Maraş Dondurması by Mado is a traditional Turkish ice cream originating from Kahramanmaraş. It is made from milk, sugar, cream, and salep, a natural ingredient obtained by processing the tubers of certain orchid species. For its traditional ice cream, Mado particularly emphasizes the use of goat’s milk sourced from its own farm near Kahramanmaraş. Salep acts as a natural thickener and gives the ice cream its characteristically dense, elastic, and stretchy consistency. During production, the mixture is churned and pounded for an extended period until it becomes uniform and develops a firmer consistency than conventional ice cream. This structure allows the product to melt more slowly, be cut with a knife, and often be served in slices. The classic variety has a pale color and a pronounced milky flavor accompanied by the mild aroma of salep. Its texture is compact and slightly chewy, clearly distinguishing it from softer and more aerated types of ice cream. In addition to the classic variety, Mado produces Maraş ice cream flavored with pistachios, cocoa, caramel, fruit, and other ingredients. It is available in the company’s patisseries and in factory-sealed packages intended for retail sale. Maraş Dondurması is Mado’s most recognizable product and the foundation of the brand’s identity.
