Riserva is a prestigious extra virgin olive oil with a protected designation of origin, coming from the heart of Umbria. It is made from hand-harvested Moraiolo and Frantoio olives, and is cold-pressed immediately after harvesting in the family-owned mill.
The oil exudes rich aromas of artichoke, thistle, and fresh grass, while its taste is perfectly balanced between bitterness and spiciness, with a finishing note of green almond. Its profile is medium to intensely fruity, making it one of the most recognized oils in Italy. This oil is best enjoyed raw — drizzled over vegetable soups, legumes, red meat, fish, or fresh cheeses, where it enhances the herbal and mineral tones of the dishes.

Marfuga is a family-run farm from Umbria, with a tradition of olive growing and processing dating back to 1817. Today, the company is synonymous with premium extra virgin olive oil, thanks in particular to local varieties such as Moraiolo, Frantoio, and Leccino.
Their olive groves cover about 40 hectares, and the uniqueness of their production lies in the careful handling of the fruit and the combination of traditional methods with modern technology.
