Hamanaka Shiosui Uni is fresh, raw sea urchin from Marukou Saito Suisan, a Japanese producer based in Hamanaka, eastern Hokkaido. It is made from locally farmed Ezo Bafun sea urchins.
The sea urchins are raised for about three years in the waters off Hamanaka and fed exclusively on wild kombu kelp from the juvenile stage. According to the producer, they are harvested on the day of shipment, then shucked and packed in salt water without added alum.
The lobes have an even orange color, a creamy texture, pronounced sweetness, and rich umami. Drain them gently before serving them on their own, over rice as uni don, or as a topping for gunkan-maki.
