Secchūbai Tokubetsu Honjōzō is a sake produced by Maruyama Shuzōjō in Jōetsu, Japan’s Niigata Prefecture. It belongs to the tokubetsu honjōzō category and is a winter release from the Secchūbai brand, left to mature after brewing before being released for sale.
It is made from Gohyakumangoku rice grown in Niigata Prefecture, along with rice kōji, water, and added distilled alcohol. The rice is polished to 60% of its original grain weight, and the sake contains 16% alcohol. Brewed during winter, it matures for approximately ten months, contributing to its rounded character.
It offers full, rounded sweetness, deep umami, and a rich, silky texture. It can be served chilled or gently warmed, with the brewery particularly recommending lightly warmed serving during winter.
