Cốt Me Mikiri is a tamarind concentrate produced by the Vietnamese brand Mikiri and intended for direct use in food and beverage preparation. It is made from naturally ripened tamarind fruit with the seeds removed during processing. According to the producer’s label, the product contains 75 percent tamarind, water, and potassium sorbate as a preservative. Processing takes place in a closed production system in which the tamarind pulp is transformed into a uniform paste suitable for easy portioning. Tamarind gives the product a pronounced sour taste and characteristic fruity aroma. Since the seeds have already been removed, the concentrate can be used without soaking and straining whole tamarind fruit. It is primarily intended as a condiment for dishes that require the characteristic acidity of tamarind. Mikiri particularly recommends it for preparing canh chua, a traditional Vietnamese sour soup. It can also be used in dishes with duck eggs, shellfish, and other ingredients prepared with tamarind sauce. The producer also recommends the concentrate for preparing tamarind-based beverages.
