Mouchou is Maison Pariès’ signature confection and one of the most iconic sweet specialties of the French Basque Country. Created in 1948 by Robert Pariès, this distinctive delicacy takes its name from the Basque word muxu meaning “kiss”, a fitting reference to its soft, indulgent character.
Often compared to a macaron, Mouchou has its own unique identity, defined by a delicate crisp outer shell and a rich, chewy interior with an intense almond profile. Made primarily with finely ground Marcona almonds, egg whites, and sugar, the recipe is intentionally less sweet than many traditional almond confections, allowing the quality of the ingredients to stand out.
