Pago Baldíos San Carlos is a high-quality extra virgin olive oil produced in the Majadas del Tiétar region, in the province of Cáceres, Spain. The harvest takes place approximately 15 days earlier than usual, which helps preserve its intense aromatic profile.
The oil is made exclusively from the Arbequina variety, with acidity rarely exceeding 0.1%. Its aroma is dominated by ripe fruit notes – green apples, almonds, and freshly cut grass – while on the palate, it opens with a sweet, almond-like sensation, followed by a subtle bitterness and a mildly spicy finish that lingers. It is ideal for salads, cold dishes, mayonnaise, and fish, and its unfiltered nature enhances the oil's natural fruity flavor.
