Production begins with milk coagulation and shaping, followed by a key maturation stage in natural limestone caves in the Picos de Europa, where high humidity and stable temperatures allow the development of characteristic blue-green veining through natural mold growth.
The texture is compact yet creamy, with a uniform interior and a thin, slightly moist rind. On the palate, it is intense and expressive, with pronounced spiciness, balanced acidity, and a long, persistent finish.
