Queso Cabrales DOP by Rojo Prieto is a traditional Asturian blue cheese made from raw cow’s milk, often complemented seasonally with goat’s and sheep’s milk to increase complexity. It is produced within the Cabrales PDO area in the Picos de Europa, following strict regulations that define both origin and method.

After curd formation, the cheese is matured for several months in natural limestone caves, where high humidity and stable temperatures allow the development of characteristic blue-green veining through natural mold growth. The texture is dense yet creamy, with a compact structure and a slightly moist rind, while the interior remains uniform without large openings.

On the palate, it is intense and well-structured, showing pronounced spiciness, balanced acidity, and a long, persistent finish.
