Rosso Gargano Passata di Puglia is a traditional Italian tomato passata made from 100% tomatoes grown in the Apulia region by members of the Rosso Gargano agricultural cooperative. It is produced by sieving ripe tomatoes to remove the skins and seeds, resulting in the dense, velvety, and homogeneous texture characteristic of traditional passata di pomodoro. The passata contains only tomatoes, salt, and citric acid as an acidity regulator. The tomatoes are harvested at peak ripeness and processed within a few hours to preserve their natural freshness, aroma, and rich tomato flavor. It is characterized by a balanced natural sweetness, mild acidity, and a full-bodied consistency, making it particularly suitable for recipes that require short cooking times while allowing the sauce to adhere well to pasta. Its smooth texture and versatile flavor also make it an excellent base for pasta sauces, pizza, and a wide variety of traditional Italian dishes.
