Bánh Tráng Mỏng Bình Định is a thin rice paper produced by the Vietnamese company Sachi Foods and based on the rice paper tradition of the Binh Dinh region. It is made from 85 percent rice, 13.5 percent tapioca starch and 1.5 percent naturally dried salt. The high proportion of rice gives the sheets a mild flavor and an aroma characteristic of rice flour products. Tapioca starch contributes elasticity and makes the softened sheets easier to fold without tearing. The rice paper is circular and available in diameters of 16 and 22 centimeters. The smaller sheets are suitable for compact rolls while the 22-centimeter version can hold a larger quantity of filling. Before preparation each sheet is briefly dipped in water, gently shaken and left to soften for approximately 30 seconds. It can be filled with boiled pork, seafood, tofu, eggs, rice noodles and fresh vegetables. Once moistened it develops a thin, flexible and slightly sticky texture that helps the roll retain its shape. The product is primarily intended for preparing fresh Vietnamese rolls served with fish sauce, soy sauce or peanut sauce.
