The beans undergo natural processing which involves drying the coffee cherries in the sun. After processing the coffee is medium-roasted to maintain a balance between aroma, acidity and bitterness. The roasted beans are ground in a stone mill to achieve the extremely fine texture required for Turkish coffee. This grind allows the coffee to be prepared without filtration with the grounds settling at the bottom of the cup. The coffee has balanced acidity, a soft body and a medium-intensity aroma.
