Mont Sainte-Victoire from The Referend Bier Blendery is a spontaneously fermented saison, conceived as a “spontaneous impression of a saison” and brewed exclusively with locally sourced grains such as wheat, rye, spelt, oats, and buckwheat, along with aged noble hops. After the wort is cooled in an open coolship and exposed to the natural microflora, the beer is matured in neutral French oak barrels - often those that previously held wine - for a period ranging from several months to over a year, depending on the blend.
The result is a pale golden, slightly hazy beer with a persistent head, offering aromas that combine herbal-spicy and citrus notes with a subtle touch of oak, and a dry, refreshing character. On the palate, it delivers a gentle, lively acidity, low bitterness, and exceptional drinkability, while the dryness of the finish accentuates its rustic, terroir-driven identity.
