Turrón de Jijona by Turrón 1880 is a traditional Spanish soft nougat produced in Jijona in the province of Alicante. It belongs to the Turrón de Jijona variety, which is distinguished by finely ground almonds and a soft, compact consistency. The product contains 70 percent roasted almonds and 15 percent honey, while the remaining ingredients include glucose-fructose syrup, sugar, egg white and an emulsifier. The almonds are sourced from Spain and evenly roasted to develop a more pronounced aroma. They are then combined with a heated mixture of honey and sugar, after which the resulting mass is ground until smooth. Further processing takes place in special vessels traditionally used to make turrón in Jijona. During mixing, the almonds release their natural oils, giving the product a soft, slightly oily and paste-like texture. Unlike hard Alicante turrón, it contains neither whole almonds nor a brittle sugar mixture. Its flavour is dominated by roasted almonds, accompanied by the pronounced sweetness of honey and sugar. The product is formed into a rectangular bar and traditionally cut into smaller pieces before serving. It is primarily associated with the Christmas season, although it forms part of the brand’s regular product range.
