Cantina il Passo is a family-owned winery located in the heart of the Vulture wine area in the Basilicata region of southern Italy, with its estate based in the village of Barile. The winery is rooted in a historic family property whose origins date back to the late 19th century, when Francesco Grimolizzi acquired the estate known as Contrada Alberi in Piano, which remains the core of the family’s landholdings and gives its name to the winery’s sole label, Alberi in Piano. Modern winemaking under the Cantina il Passo name began in the early 2010s, when the family started bottling wine from their own vineyards. Production is closely tied to the traditional underground cellars carved into volcanic tuff that are characteristic of Barile, providing naturally stable conditions particularly well suited for aging. The winery focuses exclusively on Aglianico del Vulture, an indigenous red grape variety that thrives on the volcanic soils of Monte Vulture and is known for its structure, longevity, and expressive aromatic profile. Aglianico del Vulture

Aglianico del Vulture is an Italian appellation located in Basilicata (provincial of Potenza) that produces full-bodied red wines from Aglianico grapes. The vineyards are mostly located on the volcanic soils of Monte Vulture—which influences the distinctively rich and tannic structure of these wines. They are usually dark ruby with typical aromas and flavors of dark fruit, which tend to develop into more complex nuances of earth, spices, and leather. Aglianico del Vulture wines tend to age incredibly well, becoming more refined and complex with age. Because of their good tannic structure and great acidity, they make an excellent pairing with roasted or grilled meat, especially beef, game, and aged cheese.

Some of them are familiar such as wormwood, sage, gentiana, angelica, bitter orange, and ruta, but the exact composition and the recipe remain secret. The resulting drink is clear, with an appealing mahogany color. The flavor is bittersweet and herbaceous, with some spiciness. The aromas are citrusy and herbal, with hints of spices. It is bottled at 28% ABV. Amaro is best served neat, preferably well chilled, or on the rocks. It is usually enjoyed as a digestif, but it also works well in cocktails and mixed drinks. Lucano was created in 1894 by the pastry chef Pasquale Vena from Pisticci, Basilicata. He perfected the recipe that was later passed down to family members. The drink gained popularity when the family became the official supplier to the House of Savoy, and their coat of arms is still featured on Lucano's label.
