The family’s story began in 1985, when the current producers’ parents planted a small number of olive trees for household use. The grove was expanded more substantially in 2014 with an initial 200 trees, followed by approximately 400 more.

Although they do not come from an agricultural background, the owners became first-generation olive growers and gradually developed their expertise in olive cultivation and oil production. The estate grows numerous Greek and international olive varieties, including Chalkidikis, Koroneiki, Arbequina, Lefkolia Serron, Nemoutiana, Tsounati, Megaron, Picual, Prodromou, and Kalamon. The olives are harvested in mid-October, both by hand and with electric tools, before undergoing cold extraction at temperatures below 27°C. Bottling takes place under controlled conditions, using dark glass bottles that are vacuum-filled and fitted with non-refillable caps.

Eladion Taxiarches remains a limited-production olive oil producer. Its market identity is primarily built around its single-estate origin, early harvesting, high polyphenol content, sustainable approach, and growing collection of international distinctions.

This is one of the five kinds of Greek cheeses that can be made entirely from goat's milk, however, it is usually made from sheep milk or a blend of sheep and goat milk. This soft, grainy cheese has been produced for many years exclusively in Grevena Prefecture and the Voio area in Kozani Prefecture. In the past, it was produced in western Macedonia by local shepherds, who would rennet their milk in the morning and leave the curd to rise during the day. Its name is even derived from this method – anevato means 'the cheese that rises'. Today, the procedure begins with storing the milk at 18 to 22°C . When it obtains the needed acidity, it is moved to cooling chambers for 24 hours, and rennet and salt are later added. This cheese takes two months to mature. The flavour of Anevato cheese is described as acidic, fresh, and quite rich. Since it has such a creamy texture and no crust, it is usually eaten with a spoon. With a refreshing, pleasant, slightly salty taste, this unique cheese can be served alongside any meal or enjoyed with a glass of wine.

Akanés

Akanés is a traditional sweet originating from the town of Serres. It's very similar to loukoumi, but the flavors are quite different because akanés is flavored with fresh goat butter instead of fruit essences. This sweet dates back to the Ottoman occupation in Greece – the Ottoman rulers boiled molasses with water from the Lailias springs. It is believed that the spring water gave akanés its distinct flavor. Over time, molasses was replaced with cane sugar. As the mixture developed a thick consistency, fresh butter and nuts were added to the cauldron. During the preparation, the mixture was usually stirred by slaves, as akanés needs several hours of stirring. After it has cooled down, the thick mixture was (and still is) cut into small pieces and served as a dessert.

Poniro is usually served at room temperature and sold ready to eat, without further garnish or decoration. It is most commonly eaten in pastry shops or at home as a dessert or sweet snack, and it pairs well with plain coffee, Greek coffee, or tea, which offset the sweetness and richness without competing with the custard filling.
