Smoked Scottish Salmon

Smoked Scottish salmon can be produced from wild and farm-raised salmons that fall into the category of Atlantic salmons (Salmo salar). The fish is typically cold-smoked and dry-cured, usually with salt, sugar, or spices. Smoked Scottish salmon will have orange-pink color, tender but firm flesh, and mild flavor and aroma. The smoking is usually done with oak chips made with old sherry or whisky casks, but adding birch, beech, peat, or heather is also common. The use of traditional techniques and ingredients results in a smoked salmon with unique qualities. Raw Scottish salmon (wild and farmed) is a protected PGI product, but there is no status for the smoked variety. Since there is a large influx of products labeled as Scottish-style smoked salmons produced outside of Scotland, there is an effort to protect the smoked variety under the name Smoked Scottish Salmon. This smoked salmon is often said to be the best in the world.

Scottish farmed salmon

Scottish farmed salmon belongs to the Atlantic salmon species. They are silver in color, firm to the touch (due to strong currents which ensure that they are constantly swimming), with a fibrous to smooth to even texture. After harvesting, the salmon is rapidly chilled, which is why it has a unique, consistent flavor. Scottish salmon is very health beneficial, and acts as a source of Omega 3 fatty acids, vitamins and minerals. It goes well with single malt whiskeys, lemon and creme fraiche.

They must be caught in an environmentally friendly way, either with a net and coble, cruives or bag net, haaf and poke nets, and when sold, the salmon can be fresh, whole or boxed in ice.

Whitstable oysters

They are harvested, washed and graded after three to five years of growing in the oyster beds, after which they are sold live and fresh. Visually, they are small, flat, round, bluish and firm, and are at their best if eaten in cold weather to fully experience their soft and creamy texture.

Isle of Man Queenies

Isle of Man Queenies are medium-sized queen scallops that are sustainably caught on Isle of Man. Their shell can be yellow, orange, brown, red or purple and the opaque/cream coloured meat inside the shell consists of a small, circular, cylindrical muscle to which the roe is attached. The roa can be left as it is or removed, depending on personal preferences. The taste is delicately sweet and scallops are incredibly versatile in the culinary sense. Use them in salads, baked or seared. When sold, they can be packed dry, frozen, fresh or vacuum packed.

West Wales coracle caught salmon

West Wales salmon is unique for its traditional method of catching the Salmo Salar species with coracles, small hand-made vessels shaped like baskets. The salmon is silver with a dark blue back. Their flesh is firm to the touch, pink or red-colored, freshly smelling (similar to a watermelon), and their texture is dense, with lots of muscle protein and beneficial oils. Their meat is of such great muscle quality because they are caught as soon as they enter the river from the sea, so that they do not get accustomed to the inactive river environment, and are mostly sold fresh and whole.

This is a unique salmon product which has been hand-filleted, cured and smoked using a combination of pure rock salt and oak smoke exclusively. The salmon is of the highest quality and comes within 24 hours of being caught from Scotland, with a consistent orange or pink color. The flavor of smoked salmon is mild and delicate, with London Cure accentuating the flavor of the salmon itself. It must be produced in these parts of London exclusively: Tower Hamlets, Hackney or Newham. When sold, it can be sliced or presented as a whole trimmed or untrimmed side.

After they've been tenderized by beating, ormers can be savored in many different ways - stewed, rolled in flour and fried till crispy, dressed, or pickled - but the most traditional way to consume them is as a part of Guernsey's signature ormer casserole.
