This oil is made primarily from the Picual olive variety, which thrives in the Mediterranean climate characterized by hot summers and mild winters, conditions that contribute to the unique characteristics of the oil. Known for its robust flavor, Aceite de Jaén offers a balance of bitterness and pungency, with notes of green tomato, fresh herbs, and sometimes a hint of almond, reflecting the rich terroir of the olive groves it comes from. The production of Aceite de Jaén has deep roots in the agricultural history of Andalusia, where olive cultivation has been practiced for centuries.
